The Friday Cocktail: Rebujito
It’s a new year and it seems like we’re all trying to be a bit more mindful about what we consume. I, for one, am definitely over hearty, meaty dishes and warm, sweet drinks and am on to things that feel clean, light, and healthy. When thinking of what to drink this weekend I decided I needed to search for something fresh. Enter: The Rebujito. Lemon and bubbles are exactly what I had in mind for my new start this year.
Lemon and Sherry Spritzer (aka Rebujito)
Makes two cocktails
Ingredients:
Zest of two lemons
1/2 c sugar
3 shots chilled fino sherry
Chilled seltzer
2 slices lemon (for garnish)
Instructions:
1. create simple syrup from lemon zest, sugar and 1/3 c water - strain and let cool
2. add 1 1/2 shots of sherry and 1 1/2 shots lemon syrup into chilled 10 oz. glass - fill with seltzer and garnish with lemon slices
